Marinated Swordfish and Prawns

This fresh and tasty dish is just the thing to make you feel as though you’re having dinner in the mediterranean.

Ingredients

500g headless shell on prawns
4 swordfish steaks
Ground black pepper
Salt
4 tbsp olive oil
2 tbsp lemon juice
1 tbsp fresh oregano
Bunch of spring onions, washed and trimmed

Sauce
25g butter
1 tbsp olive oil
4 finely chopped shallots
2 tbsp white wine
Garlic

Method

Season the swordfish steaks with salt and pepper and set aside. Mix the oil, lemon juice and oregano in a dish and mix well.

Add the fish and the prawns to the marinade mix and make sure all sides are covered well. Leave them aside to marinade for about an hour.

In a large frying pan, melt the butter with the oil until sizzling. Add the shallots and garlic and cook until soft.

Add the wine and then the fish steaks and the prawns. Cook until the fish is completely opaque and the prawns are pink and cooked through.

Remove them from the pan and set aside. Stir fry the whole spring onions in the pan in the remaining sauce until they are slightly wilted and serve everything together with rice or a green salad.
