Marinated Swordfish and Prawns
Ingredients
- 500g headless shell on prawns
- 4 swordfish steaks
- Ground black pepper
- Salt
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp fresh oregano
- Bunch of spring onions, washed and trimmed
Sauce
- 25g butter
- 1 tbsp olive oil
- 4 finely chopped shallots
- 2 tbsp white wine
- Garlic
Method
- Season the swordfish steaks with salt and pepper and set aside.
- Mix the oil, lemon juice and oregano in a dish and mix well.
- Add the fish and the prawns to the marinade mix and make sure all sides are covered well.
- Leave them aside to marinade for about an hour.
- In a large frying pan, melt the butter with the oil until sizzling.
- Add the shallots and garlic and cook until soft.
- Add the wine and then the fish steaks and the prawns.
- Cook until the fish is completely opaque and the prawns are pink and cooked through.
- Remove them from the pan and set aside.
- Stir fry the whole spring onions in the pan in the remaining sauce until they are slightly wilted and serve everything together with rice or a green salad.
