Marinated Swordfish and Prawns

Ingredients

  • 500g headless shell on prawns
  • 4 swordfish steaks
  • Ground black pepper
  • Salt
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp fresh oregano
  • Bunch of spring onions, washed and trimmed

Sauce

  • 25g butter
  • 1 tbsp olive oil
  • 4 finely chopped shallots
  • 2 tbsp white wine
  • Garlic

Method

  • Season the swordfish steaks with salt and pepper and set aside. 
  • Mix the oil, lemon juice and oregano in a dish and mix well. 
  • Add the fish and the prawns to the marinade mix and make sure all sides are covered well. 
  • Leave them aside to marinade for about an hour.
  • In a large frying pan, melt the butter with the oil until sizzling. 
  • Add the shallots and garlic and cook until soft. 
  • Add the wine and then the fish steaks and the prawns. 
  • Cook until the fish is completely opaque and the prawns are pink and cooked through. 
  • Remove them from the pan and set aside.
  • Stir fry the whole spring onions in the pan in the remaining sauce until they are slightly wilted and serve everything together with rice or a green salad.
